    INGREDIENTS

    For the apple peach muffins

    • ½ cup butter salted, softened
    • 3 yellow peaches fresh, peeled, diced small, divided
    • 2 apples, peeled and diced small
    • ¾ cup sugar
    • 2 medium eggs, room temperature, whisked
    • 1 tsp vanilla extract
    • ½ tsp cinnamon ground
    • ½ cup milk whole
    • 2 cups flour all purpose
    • 2 tsp baking powder
    • 1½ teaspoons sea salt

    For the lemon icing

    • ½ cup sugar powdered, plus 2 tbsp
    • 2 tbsp lemon juice, fresh squeezed

    POPULAR SUBSTITUTIONS & ADDITIONS

    • Fruit swaps: Nectarines, pears, or berries work great.
    • Add nutmeg or cardamom for extra warmth.
    • Fold in pecans or walnuts.

    HOW TO MAKE APPLE PEACH MUFFINS

    Here’s the step-by-step recipe…

    Step 1 – Prep the oven & pan. Heat oven to 375°F. I recommend only making 10 muffins instead of 12 so they bake up bigger and more bakery-style. So line a 12-cup muffin tin with 10 liners on the outside (leave middle 2 empty). Lightly grease them with a spray of olive oil or whatever you’d like.
    Step 2 – Use a stand mixer (or hand mixer and a large bowl) to beat together softened butter and sugar for about 1 minute, scraping down the sides with a spatula, until combined.
    Step 3 – Add eggs slowly, whisking at the same time, until combined, about 1 minute. Add vanilla extract, cinnamon and milk. Beat for about another minute, until combined. The mixture will be very liquid at this point.
    Step 4 – Add in flour, baking powder and salt. Whisk gently until combined.
    Step 5 – With a spatula, fold in most of the diced peaches and apples, reserving ½ cup of fruit to add to top the muffins before baking.
    Step 6 – Divide batter into 10 muffin wells. Top each muffin with the remaining apples and peaches, gently pressing them into the tops.
    Step 7 – Bake for 30–45 minutes, or until golden on top and a toothpick inserted comes out clean.
    Step 8 – Cool muffins for 20-30 minutes in the pan before drizzling on lemon icing.

    To make the lemon icing…

    Step 1 – Add powdered sugar to a bowl.
    Step 2 – Pour in fresh-squeezed lemon juice while whisking to combine to reach your desired consistency, similar to a thick pancake batter. Add more lemon juice/powdered sugar as needed.

    Step 3 – Drizzle the lemon icing over the apple peach muffins as desired.

    TIPS FOR MAKING THE BEST APPLE PEACH MUFFINS 

    • Use ripe but firm fruit. Juicy peaches and crisp apples give you the best flavor and texture without turning the muffins soggy.
    • Don’t overmix the batter. Once you add the flour, mix just until combined so the muffins stay light, fluffy, and bakery-style.
    • Save fruit for the top. Pressing extra diced apple and peach pieces on top before baking gives you those golden, caramelized, picture-perfect muffin tops.
    • Make 10 instead of 12, so they are over-sized like you would get in a bakery.
