Cheesy Alfredo Chicken Sliders
Video
Ingredients
- 1 pack mini Hawaiian rolls 12-count, such as King’s Hawaiian
- ½ cup Pesto Rosso Make your own or use store-bought, or use your favorite red sauce. It is a red pesto made with sun-dried tomatoes, cheese, pine nuts, and herbs
- 1 cup diced cooked chicken rotisserie or smoked whole chicken
- ½ cup Alfredo sauce such as Sonoma Gourmet Kale Pesto with White Cheddar or your preferred sauce
- ¼ cup diced roasted red peppers from a jar, drained
- 1 cup shredded pepper jack cheese or your favorite shredded cheese
- 3 tbsp salted butter melted
- 2 tbsp chopped fresh parsley
- ¼ tsp garlic powder
- 1 tbsp freshly shredded Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C) and get your rolls ready. Slice the Hawaiian rolls in half horizontally, making sure to keep the top layer intact. Place the bottom half in a baking dish so they’re ready to soak up all the delicious layers.
- Now for the fillings. Spread the Pesto Rosso evenly across the bottom layer of rolls, creating a flavorful base. Sprinkle on the diced cooked chicken, making sure every bite gets some. Drizzle Alfredo sauce over the top, letting it sink into the chicken for extra richness. For a little kick, scatter diced roasted red peppers over the mix, then finish it off with a generous sprinkle of shredded pepper jack cheese.
- Next, make the garlic butter. In a small bowl, combine melted salted butter, chopped fresh parsley, and garlic powder. Stir everything together with a fork until well mixed—it’s simple but adds so much flavor.
- Now, it’s time to bring it all together. Place the top layer of rolls back on, pressing them down gently. Brush the tops generously with the garlic butter mixture, saving a little for after baking. For extra savory goodness, sprinkle some freshly shredded Parmesan over the top. Pop the dish in the oven and bake for 8-10 minutes, until the cheese is perfectly melted and the tops are golden brown.
- Once they’re out of the oven, brush them with the remaining garlic butter while they’re still warm. Serve them hot, either pulling them apart for a casual bite or slicing them into neat little sliders. Either way, they’re packed with flavor and impossible to resist.
